I usually roast cauliflower with just a touch of olive oil, salt, and pepper, but I stumbled upon a slightly more interesting Emeril version that I tweaked to my family's liking and it was a hit - proven true by the fact that I had several teenagers sampling bite after bite as soon as I took these out of the oven.

Warning - if you make this dish, your house will be filled with the aroma of caramelized onions and garlic!


Start with a head of fresh cauliflower - chop it into smallish florets.


Time to add onions and garlic. My cauliflower was huge, so I used 5 cloves of garlic and 2 small onions.


I always chop the dried ends of the garlic cloves off - ick.


Chop the onions into large cubes. If your garlic cloves are large, cut them in half.
Add onions and garlic to the cauliflower florets.


Time to make the flavorful dressing. It's simple - all you need is extra virgin olive oil, freshly squeezed lemon juice, Kosher salt, and ground pepper (recipe below).


Whisk, whisk, whisk.


Pour over veggies; toss to coat evenly.

Oven Roasted Cauliflower, Onions, and Garlic

1 head cauliflower, cut into small florets
3-5 cloves garlic, cut in half if large
1-2 small onions, cut into large cubes

3-4 tablespoons extra virgin olive oil
1-2 tablespoons freshly squeezed lemon juice
1 teaspoon Kosher salt
1 teaspoon pepper

Optional Garnish - chopped parsley or chives, crushed red pepper flakes, or parmesan

Directions
Preheat the oven to 400F. Place veggies in a large casserole dish; toss with dressing. Bake at 400F for about an hour, stirring every 10 minutes. Garnish.

  4. This does look unbelievably good. I can practically smell it. I'm not sure if I can make this weekend, but it'll be soon. I love that it's so easy and other than the cauliflower has ingredients I always have in the apartment anyway.

  12. I love roasted veggies and can't really tell you why I've never roasted cauliflower, but you've inspired me and I happened to buy some yesterday. Does this mean I'm psychic? I don't know, but I haven't bought fresh cauliflower for at least two years!

  30. I tried this recipe and it is great. My family prefers onions cut into smaller pieces, so next time I will change that. I also plan to add some parmesan cheese after the dish comes out of the oven. My son decided it needed a little something extra, so I'll try the parmesan. But, my hubby and I loved it just as presented here.

  34. I'll definitely try this recipe! Just last night, we had cauliflower roasted on the Big Green Egg and it had a funny taste to it. I think it might be because of the wood chips we were using. I hated the ruined cauliflower because I love cauliflower.

  39. I finally made this. I prepared as the recipe notes. However, I added way too much garlic. That said, the husband did say he liked it which is HUGE because he said he didn't like cauliflower. I told him I'd make it again with less garlic. So easy and so much flavor for not a lot of work.

  42. Cauliflower prevent colon cancer and contributes significant amounts of iron. It also contains vitamins E and C. I like to eat it at least twice per week and i love the taste. I like cauliflower in salad or another kind of recipes.

    Later: I garnished with bacon bits, a drizzle of sour cream, and celery leaf chiffonade. It was yummy - I ate the whole thing!
