Yummy roasted cauliflower with onions and garlic. Oh my goodness is this a fantastic veggie dish. Sweet, garlicy, amazing!I usually roast cauliflower with just a touch of olive oil, salt, and pepper, but I stumbled upon a slightly more interesting Emeril version that I tweaked to my family's liking and it was a hit - proven true by the fact that I had several teenagers sampling bite after bite as soon as I took these out of the oven.
Warning - if you make this dish, your house will be filled with the aroma of caramelized onions and garlic!
Add onions and garlic to the cauliflower florets.
Heaven!!1 head cauliflower, cut into small florets
3-5 cloves garlic, cut in half if large
1-2 small onions, cut into large cubes
3-4 tablespoons extra virgin olive oil
1-2 tablespoons freshly squeezed lemon juice
1 teaspoon Kosher salt
1 teaspoon pepper
Optional Garnish - chopped parsley or chives, crushed red pepper flakes, or parmesan
Directions
Preheat the oven to 400F. Place veggies in a large casserole dish; toss with dressing. Bake at 400F for about an hour, stirring every 10 minutes. Garnish.

Wow! That looks great...I'll definitely try.
ReplyDeleteOh man..... If I had ANY of the ingredients I would be tempted to trot right off to the kitchen. Unfortunately, I don't. Wait - I do have the pepper! Alas...poor me.
ReplyDeleteSure looks yummy.

This looks so unbelievably good. I can't wait to try it. And cauliflower is on sale right now...2 huge heads for $5.00. I hope I can make this sometime this weekend. THANKS!
ReplyDeleteThis does look unbelievably good. I can practically smell it. I'm not sure if I can make this weekend, but it'll be soon. I love that it's so easy and other than the cauliflower has ingredients I always have in the apartment anyway.
ReplyDeleteThis recipe sounds amazing! We love cauliflower and I try to serve it a couple of times a week. Thank you for sharing this recipe...I will make it this weekend!

I love roasted veggies and can't really tell you why I've never roasted cauliflower, but you've inspired me and I happened to buy some yesterday. Does this mean I'm psychic? I don't know, but I haven't bought fresh cauliflower for at least two years!
ReplyDeleteYum! This one is definitely a keeper. I can't wait to try it!

ReplyDeleteI have been looking for a way to spice up cauliflowers, and yours is amazingly easy for a me. I'm sold and followed!
ReplyDeleteThat looks very yummy. Especially those darker (caramelized) pieces of cauliflower :o)
ReplyDeleteI love roasted cauliflower and will very soon give this Emeril version a try. Everything is better with garlic & onions :)
ReplyDeleteBlessings!

OMGosh! This looks too good! On my way to the store for cherries for the HCB pineapple cake and coming home with a cauliflower. You cook up the most amazing things. Very lucky family you have.
ReplyDeleteThis truly looks heavenly. A recipe I will copy and use. Thank you for sharing. I can already smell the wonderful garlic and onions! :)
ReplyDeleteI am printing this off to make! I usually just roast cauliflower as you said you do, with the olive oil and salt & pepper, but this looks and sounds so much better.
ReplyDeleteNo one else in my house likes cauliflower. I am going to make this just for me!
ReplyDeleteHeaven is exactly how I describe roasted cauliflower. So simple but such fantastic flavor!
ReplyDeleteThanks for your lovely comment!

That looks deeelish! I love roasted cauliflower so this is definitely a twist I will be trying.
ReplyDeleteI tried this recipe and it is great. My family prefers onions cut into smaller pieces, so next time I will change that. I also plan to add some parmesan cheese after the dish comes out of the oven. My son decided it needed a little something extra, so I'll try the parmesan. But, my hubby and I loved it just as presented here.
ReplyDeleteSo glad you liked it Sylvia - Parmesan is an excellent addition (crushed red pepper flakes too)!

this looks so yummy!!!
ReplyDeleteI love cauliflower and garlic. But the addition of onions makes me swoon with hunger. The cauliflower has such a gorgeous texture. What a brilliant idea to make a vinaigrette. Oh, I can't wait!
ReplyDeleteO that looks great - I bet it also smelled great....yummo !

I'll definitely try this recipe! Just last night, we had cauliflower roasted on the Big Green Egg and it had a funny taste to it. I think it might be because of the wood chips we were using. I hated the ruined cauliflower because I love cauliflower.
ReplyDeletei definitely think the best thing you can do for a head of cauliflower is roast the heck out of it. that simple act adds so much flavor and changes the consistency completely! great dish!
ReplyDeleteEvery time, I see these photos, I start to yearn for cauliflower. Why is it always in the middle of the night?
ReplyDeleteI knew there was a reason I bought cauliflower yesterday! Thanks for posting this.
ReplyDeleteI was also thinking maybe crumbled bacon on top, but that seems too decadent. Cheese may be a healthier route for people like my husband who needs his veggies disguised.
ReplyDeleteI finally made this. I prepared as the recipe notes. However, I added way too much garlic. That said, the husband did say he liked it which is HUGE because he said he didn't like cauliflower. I told him I'd make it again with less garlic. So easy and so much flavor for not a lot of work.
ReplyDeleteI made this and featured it as my Saturday Blog Showcase post. It's delicious! It took my oven a little longer to brown the cauliflower, but i loved it! Thanks for a keeper recipe!
ReplyDeleteBig smile - I'm so happy you like this dish enough to feature it on your blog! Lori, you're photos are amazing!!!
ReplyDelete:)

Cauliflower prevent colon cancer and contributes significant amounts of iron. It also contains vitamins E and C. I like to eat it at least twice per week and i love the taste. I like cauliflower in salad or another kind of recipes.

ReplyDeleteOh Man!! That looks mouth wateringly fantastic!!! :P
ReplyDeleteIt's in the oven right now. Smells heavenly. I can hardly wait! (Drooool....)
ReplyDeleteLater: I garnished with bacon bits, a drizzle of sour cream, and celery leaf chiffonade. It was yummy - I ate the whole thing!
