10 Minute Cream of Tomato Soup

10 Minute Cream of Tomato Soup - ButterYum
The outside temperature has taken a dive and I spent most of the day warding off a chill with thoughts of a toasty grilled cheese sandwich and comforting bowl of steamy tomato soup for dinner.  Oh yea, that was going to fix me up!  Of course I didn't realize there was no tomato soup in the pantry.  When dinner time arrived I found diced tomatoes, whole tomatoes, crushed tomatoes, tomato paste, tomato puree, sun dried tomatoes... even ro-tel tomatoes, but not one single can of simple tomato soup.  So I surveyed the ingredients at hand, threw a few things together, and this is what I came up with - an incredibly delicious version which only took about 10 minutes to make.  I hope you'll give it a try.

ButterYum's Cream of Tomato Soup
Serves 2-4

28 ounce can of San Marzano crushed tomatoes or tomato puree
1 cup milk
1 cup half and half
2 teaspoons dried basil
1 teaspoon dried granulated onion or onion powder (not onion salt)
1/2 teaspoon celery seed (not celery salt)
1/2 teaspoon kosher salt
1/2 teaspoon finely ground black pepper
basil oil for garnish

Combine all ingredient together in a medium saucepan and heat; stirring occasionally.  Drizzle with basil oil and serve. 

Note:  for silky smooth soup, puree in blender before serving.

  9. This would be so much better than anything in a can anyway. Does everyone have tomato soup with grilled cheese? Were we brainwashed as kids that these 2 things go together?

    I don't keep half and half at my house. I only buy it for recipes. If I have it...it finds its way on my cereal, in my coffee...you name it.

  10. nothing better in cold weather than a piping hot bowl or mug of home made soup to heat you up from the inside out.

    Buying soup in a can is just never the same as home made !

  11. I am not that big of a fan of the canned version, but this one looks so fabulous! I love the flavors you have added. Thanks for the fun recipe. Could have used it tonight as I had a sore throat and hot soup would have soothed it! I am printing it off right now.

  16. We had our first tomato soup and toasted cheese sandwich of the season this past week. From hot Indian Summer to cold, rainy weather. I doctored up one of those boxes of soup on hand. I think your's sounds much better.

  29. Bet it would be even better if you switch the half amd half for heavy cream. Sure it adds fat and calories but mmmmmmmmmmmmmmmmmm!
