| Buttermilk Biscuits and Sausage Gravy - ButterYum |
I'm sharing this recipe here on Cozy Home Scenes.
Sausage Gravy
makes 3-4 cups (about 6 servings)
1 pound breakfast sausage, cooked (reserve fat drippings)
4 tablespoons fat (any one or a combination of the following: sausage or bacon drippings, or melted butter)
4 tablespoons all-purpose flour
2 cups milk
1 teaspoon Kosher salt
1 teaspoon ground pepper
1 teaspoon rubbed sage
1 teaspoon dried parsley
In a medium saucepan over medium-high heat, melt fat and add flour; whisking until until the mixture bubbles for a full minute. Add milk, salt, pepper, sage, and parsley; continue whisking until the mixture comes to a boil and thickens. Turn off heat and stir in cooked sausage. Serve over homemade Buttermilk Biscuits. The gravy will thicken as it cools - if needed, stir in a splash of milk to thin (works well when heating leftover gravy as well).

ReplyDeleteYour biscuit tutorial looks wonderful. We make biscuits and gravy for Christmas morning every year and this year my daughter in laws were saying they had never had it before being in our family. We were telling them that we hadn't had it until my oldest daughter had tried it in a restaurant and we all fell in love. Truly one of those comfort foods that everyone should know about.

ReplyDeleteSo funny - I made biscuits to go with dinner last night, and my husband got this faraway look in his eyes and said "You haven't made biscuits and gravy in such a long time..." :) Now that I see this, I know it's meant to be - this weekend, in fact! :)
ReplyDeleteThis is my favorite comfort food of all time! I could eat biscuits and gravy every day. Not real good for the old buttocks though! I have learned not to order B&G out as restaurants can really mess up the gravy. I can never make a small batch of gravy though. No problem though, means I always have a "spare" batch in the freezer.

ReplyDeleteMy hubby laughs...as they serve this in the hospital cafeteria!! I've never eaten sausage and biscuits...although they are obviously a staple of Indiana cuisine! Your biscuits are the BEST!!!

I haven't made biscuits and gravy in such a long time, your post reminded me that I should make it again soon. It was a favorite of mine as a child.
ReplyDeleteI wanted you to know that I took your recipe for Southwestern Vegetable Chicken Soup for my garden circle's Soup Luncheon and it was a hit. Thank you so much for sharing the recipe. I made copies of it to share with my circle members and they were so appreciative. To garnish the soup I took shredded English Cheddar and tortilla strips. Everyone loved it.

What wonderful comfort food! I've never made biscuits with sausage gravy but I've had them in the southern US and absolutely love them. My family are going to be so pleased when I make your yummy recipe! Thank you for sharing it.

ReplyDeleteEvery part of the South is different. In GA we cook the sausage for breakfast and use the drippings and little pieces to make the gravy. No special spices just use buttermilk and good salt and pepper. AND we split our biscuits, just pull them in half open face style before adding gravy. We serve this with eggs, sausage, and grits w/butter. Yum!!!
